So far I have not met a cava I do not like; however, the Raventos is really a standout among sparkling Spanish wines. Pale in color, light and refreshing, it is exactly what you hope for when sipping a glass of sparkling wine. However, it is not your simple bubbly, as it has distinct notes of green apple, peach, and citrus. The Raventos was first introduced to me during a great wine tasting at New York Vintners but it will certainly not be the last. It’s definitely an easy complement to lighter fare, think salmon tartare or cheeses, but would also be a welcome companion to your next celebration (funny that New Year’s is just around the corner).
